Salad mix of quinoa, figs, parma ham and pesto croutons


Recipe preparation
  • In a salad bowl, pour 100 g of a quinoa gourmand and prepare as indicated on the pack. Keep in the fridge
  • Cut each fig in 4 pieces
  • Cut the feta cheese and dice the melon
  • Slice the Parma ham
  • Prepare the tapenade:
  • Mash the olives, the anchovy fillets and the capers with a chopper
  • Add some olive oil and carry on mashing the mix until you obtain a homogeneous mix
  • Season with pepper and lemon juice
  • Spread the tapenade on the croutons
  • Prepare the seasoning
  • Put in a salad bowl the cereal mix, the melon, the fig pieces and the Parma ham
  • Add the croutons on top as a decoration


  • You can replace the figs with dried apricots
  • You can replace the Parma ham with regular cured ham
  • You can buy ready-made tapenade


  • 1 bag of Tipiak Bread croutons
  • 100 g of Quinoa Gourmand
  • 1 melon
  • 1 bag of young salad leaves
  • 100 g of feta cheese
  • 100 g of Parma ham
  • 8 dry figs
  • 200 g of pitted green olives
  • 100 g of capers
  • 10 anchovy fillets
  • 15 cl of olive oil
  • 1 dash of lemon juice
  • Black pepper


  • 1 tablespoon of mustard
  • 1 tablespoon of honey
  • 1 tablespoon of cider vinegar
  • 4 tablespoons of olive oil
  • Salt, pepper
