Fried gambas with apricots and couscous


Recipe preparation
  • Defrost and peel the gambas
  • Peel and chop the garlic cloves, chop the onions
  • Remove the seeds from the chilli pepper and slice it
  • Rinse, then roughly cut the spinach
  • Brown the onions with the chilli pepper in olive oil
  • Add the spinach and allow to reduce for a few minutes
  • Meanwhile, cook the couscous as indicated on the box
  • In another pan, melt the butter and when it is hot, cook the gambas with the garlic and the white wine until they become pinkish
  • Add the apricots sliced in 2 and brown for a short moment
  • Add the spinach, the couscous, and decorate with the gambas and the apricots
  • Season to your taste and finish with a bit of lime juice


  • 16 frozen raw gambas
  • 5 cl of white wine
  • 2 garlic cloves
  • 4 green onions
  • 1 long green chilli pepper
  • Olive oil
  • 3 large handfuls of spinach
  • 250 g of Tipiak Couscous
  • 8 fresh apricots
  • 1 lime
  • Salt, pepper
