Italian style gratin


Recipe preparation
  • Preheat the oven to 210°C
  • Rinse and dry the apricots, then dice them
  • Spread sugar on them. Save some for the decoration
  • In a salad bowl, pour the Tipiak couscous and boiling water (5min cooking)
  • Meanwhile, chop the shallots and brown them on a low heat with some olive oil until they become translucent
  • Dice 4 slices of ham and slice the 2 others
  • Dice one mozzarella and slice the other one
  • Allow to sit for 5 minutes
  • Mix the couscous with the shallots, the ham pieces, the apricot cubes and the mozzarella
  • Pour this mix in a gratin dish greased with oil
  • Put on it the rest of apricot cubes
  • Add some ham and mozzarella slices on top
  • Cook for 15 minutes


  • You can add tomato sauce to the mix


  • 8 large fresh apricots (400g)
  • 2 tablespoons of sugar
  • 300 g of Tipiak couscous
  • 2 shallots
  • 1 tablespoon of olive oil
  • 6 Prosciutto di Parma ham slices
  • 2 mozzarella portions
  • ½ l of hot water
