Surprising mix of couscous, scallops & mango

Preparation

Recipe preparation
  • Make lime zest
  • Split the vanilla bean lengthway and remove the seeds with a knife blade
  • Peel then dice the mango
  • Heat the crème fraîche with lime zests and the vanilla seeds in a pan over low heat. When it is quivering, allow to infuse for 30 minutes away from the heat
  • In a salad bowl, prepare 125 g of Tipiak Couscous and pour 155 ml of boiling water with some butter, mix and cover for 4 minutes
  • Sieve the cream
  • Heat the olive oil with butter and cook the scallops for 2 minutes on each side
  • Put some couscous in each glass, then the mango dices, the vanilla sauce and the scallops
  • Heat the vanilla sauce for 30 secondes in the microwave and pour on the scallops before you serve it

  • 15 cl of liquid crème fraîche
  • 1 vanilla bean
  • 1 tablespoon of olive oil
